- 3 Kerelas
- 1/2 white onion diced
- 1/2 tsp red chilli powder
- 1/2 tsp garam masala
- 1/2 tsp cumin powder
- 1/2 tsp amchoor powder
- 1 heaping tbs salt
- wash kerelas for about 2 minutes under cold water
- peel kerelas (you can save shavings and mix them in your rotis for future use)
- fill a 9" skillet with cold water and add kerelas in the skillet
- add one heaping tbs salt in the water and stir
- let sit for 30 minutes ( this reduces the bitterness)
- squeeze water from the karelas
- heat about 4 tbs oil in pan and fry karelas until light brown
- add onions and all the spices (no salt necessary, already absorbed from water bath)
- cook on medium heat until subzi turns dark brown
- serve hot with rotis, yum!
